Makes 100

150 g melted butter
4 1/2 dl powdered sugar
6 dl flour
6 egg yolks
4 tsp vanilla sugar
1 1/2 tsp baking soda
1 1/2 tsp baking powder
6 handfuls chopped almonds
150 g chopped chocolate
100 g dried cranberries
12 tsp liquorice powder

Blend powdered sugar, butter, and vanilla sugar together. Blend in egg yolks. In a separate bowl, combine baking soda, baking powder, and flour. Blend into butter mixture. Blend in liquorice powder. Fold in almonds, chocolate, and cranberries. Drop by spoonfuls onto a parchment-lined baking sheet. Bake at 150 C (convection) for 7-8 minutes. Let cool on wire racks.

Store Bededag is on 16 May this year. For those who don’t know what Store Bededag (Great Prayer Day) is, it’s a Danish holiday celebrated on the fourth Friday after Easter that was created by King Christian V as a consolidation of of several minor (or local) Catholic holidays that the Church observed that had survived the Reformation. 50 g butter
1/4 L milk
25 g fresh yeast
1 egg
2 tbsp honey
1 1/2 tsp ground ginger
1/2 tsp kosher salt
500 g flour
75 g dried cranberries

Melt the butter and pour into the milk, which should be heated to lukewarm. Dissolve the yeast in the butter mixture. Beat egg, honey, ginger, and salt into the liquid. Add some of the flour and all of the cranberries and mix the dough together, then add the rest of the flour and knead lightly. The dough should be light and supple, so you might not need all of the flour. Let the dough rise, covered with a damp towel, for ca. 1/2 hour. Punch the dough down and form into 16 rolls. Place them close together on a parchment-lined baking sheet. Let them rise, covered with a damp towel, for ca. 1/2 hour and bake in the middle of the oven at 200 C for ca. 20 minutes. They should be light in colour. Let cool. Split them and toast the insides and serve with your choice of toppings.

Makes 15-20
Work Time: 20 min.
Baking Time: ca. 1 time
ca. 3 egg whites (100g)
200 g powdered sugar
1 1⁄2 tbsp raw liquorice powder
2 tbsp dried cranberries
Method:
  1. Beat egg whites and sugar to a stiff foam. Add liquorice powder and put half of the cranberries in.
  2. Place the mixture in a pastry bag with a smooth tip. Pipe hearts of two “drops” and place a dried cranberry in the middle of each one.
  3. Bake for  ca. 1 hour in an oven heated to 90-100 C. Let cool on a wire rack and store in a dry place.
