Aebleskiver with Marzipan and Apple Compote

100 g butter
600 g flour
2 dl buttermilk
2 dl milk
1 dl Christmas ale or dark beer
4 tbsp sugar
6 whole eggs
15 g yeast
1 tsp vanilla sugar
1 tsp baking powder
Butter or Crisco for frying
400 g apples
200 g sugar
1 pkg raw marzipan

Æbleskiver:
Melt 100g butter in the milk. Add yeast, flour, buttermilk, beer, sugar, vanilla sugar, and baking powder. Mix until smooth and even. Let rest for 30 minutes.


Compote:

Dice the apples, and cook with sugar. Add some cinnamon and vanilla sugar if you wish.  Cook until the apples are soft.

Form small balls out of the marzipan and press them completely flate between two layers of plastic wrap.

Pack a little bit of apple compote into the marzipan

Cook up the  æbleskiver.  Before they need to be turned, put a little marzipan ball in the middle. Turn and finish cooking.

Sprinkle with sugar or powdered sugar and serve with the rest of the apple compote.
